LEMON BROILED ORANGE ROUGHY

3 TBLS lemon juice
1 TBL Dijon mustard
1 TBL butter or margarine, melted
¼ tsp pepper
1-1/2 pounds orange roughy fillets
freshly ground pepper
garnish:  lemon slices

Combine first 4 ingredients, stir well. Place fillets on a lightly greased rack in broiler pan. Brush half of lemon juice mixture on fillets. Broil 5-1/2 inches from heat at 425 degrees for 5-6 minutes or until fish flakes easily when tested with a fork. Transfer fillets to a serving platter.

Drizzle remaining half of lemon juice mixture over fillets. Sprinkle with pepper; garnish, if desired.

Yield: 4 servings.
