TACO BEEF/NOODLE BAKE
½ cup chopped onion
1 (15-oz) can tomato sauce
½ cup water
1 (1-1/4 oz) package taco seasoning mix
2 (5 oz) packages medium egg noodles
2 cups small curd cottage cheese
¼ cup commercial sour cream
1 tablespoon all-purpose flour
2 tsps beef-flavored bouillon granules
¼ cup chopped green onion
1 cup (4 oz) shredded mozzarella cheese
Cook ground beef and onion until meat is browned, stirring often to crumble meat – drain off drippings. Add tomato sauce, water, and taco seasoning mix, bring to a boil. Reduce heat and simmer 10 minutes.
Cook noodles according to pkg directions; drain. Combine noodles, cottage cheese, sour cream, flour, bouillon granules, and green onion; mix well. Spoon noodle mixture into a greased 2-1/2 quart casserole. Top with meat mixture. Bake at 350 degrees for 25 minutes; sprinkle with mozzarella cheese and bake an additional 5 minutes or until cheese melts.
Let stand 10 minutes before serving.
