RAMANO CHICKEN BREASTS

1/3 cup all-purpose flour
1/2 tsp salt
1/4 tsp pepper
3 whole boneless/skinless chicken breasts, split
2 tablespoons melted shortening or vegetable oil
1/4 cup minced onion
2 cups tomato juice
2 tablespoons grated Romano or Parmesan cheese
1 tablespoon sugar
1/2 tsp salt
1/2 tsp garlic salt
1/2 tsp whole oregano
1/4 tsp basil leaves
1 tsp vinegar
1 4-oz can sliced mushrooms, drained
1 tablespoon minced parsley
1/2 cup grated Romano or Parmesan cheese
Hot cooked spaghetti (optional)

Combine flour, 1/2 tsp salt and pepper. Dredge chicken in flour mixture and brown in hot shortening. Drain chicken on paper towels. Pour off all but 1 tablespoon of pan drippings.

Saute onion in reserved drippings until tender. Add next 10 ingredients stirring well. Return chicken to skillet; cover and simmer 45 min or until tender.

At serving time, sprinkle chicken with 1/2 cup Romano cheese. Serve over spaghetti.
