CHICKEN MARINARA

¾ cup fine dry breadcrumbs
½ tsp salt
¼ tsp pepper
6 chicken breast halves, skinned and deboned
2 eggs, beaten
¼ cup butter or margarine
1 (15-1/2 oz) jar marinara sauce or spaghetti sauce
½ cup half and half
3 (1 oz) slices mozzarella cheese, cut in half.
6 (1 oz) slices Swiss cheese
1 tablespoon grated Parmesan cheese
cooked noodles (optional)

Combine breadcrumbs, salt and pepper; mix well and set aside.  Dip each chicken breast in eggs; coat with breadcrumbs mixture and set aside.  Melt butter in a large skillet over medium heat.  Add chicken and cook about 2 minutes on each side or until light-golden brown.

Remove chicken and drain.

Combine marinara sauce and half and half, mixing well; reserve ¼ cup plus 2 tablespoons and set aside.  Pour remaining sauce mixture into a lightly greased 13x9x2-inch baking dish and top with chicken.  Cover and bake at 350 degrees for 25 minutes.

Place a slice of mozzarella and Swiss cheese on each chicken breast top with a tablespoon of reserved sauce and sprinkle with Parmesan cheese.  Cover and bake an additional 5 minutes.

Serve over cooked noodles, if desired.
