HALIBUT SURPRISE

1 lb. Halibut
Vegetable cooking spray
1-1/2 tsp lemon juice
¼ tsp lemon pepper
1 small onion, sliced
½ medium size green pepper, cut into thin strips
1 tomato, peeled and sliced
¼ to ½ tsp salt
Dash of pepper
2 tsp Worcestershire sauce
1 tablespoon butter or margarine
3 thin slices provolone cheese

Wash fish and pat dry.  Place fish, skin side down, on an 18- x 12-inch piece of aluminum foil coated with cooking spray.  Sprinkle fish with lemon juice and lemon pepper.  Top fish with sliced onion, green pepper strips and tomato slices.  Sprinkle with salt, pepper and Worcestershire sauce; dot with 1 tablespoon butter.  Bring edges of foil up around fish and seal; bake at 350 degrees for 20 to 25 minutes.

Open foil; top fish with a layer of cheese.  Reseal foil, and bank an additional 1 to 2 minutes.
