ROASTED QUAIL

4 Quail
Salt
1 cup water
4 bacon strips
Pepper
1 cup sour cream

Rinse quail inside and out with cold water.  Pin bacon strip over breast of each quail.  Rub each bird inside and out with salt and pepper.  Place in roast pan with water.  Roast in 450 degrees oven for 30 minutes, baste every 5 minutes.  When quail and gravy are nicely browned, pour some sour cream over the top.  Let cream bubble in pan for 1 minute, then baste once more.  Serve with gravy poured over the quail.
