8 pcs Taco Shells or Flour Tortillas
1 lbs. Hirsch’s Cod Loins or Tilapia
2 TBL your favorite Chipotle seasoning or Lysanders Chipotle Seasoning
To Make Coleslaw Vinaigrette
¼ cup plain yogurt
¼ cup mayonnaise
¼ cup orange juice
3 TBL white vinegar
1-1/2 tsp honey
7 cups shredded cabbage – about 10 oz.
1 cup shredded carrots
½ cup chopped cilantro
Salt and pepper to taste
Combine all ingredients
Season fish evenly with chipotle seasoning. Place in non-stick skillet over medium-high heat lightly oiled. Cook fish turning occasionally for 3 to 5 minutes until flakes easily in center and is lightly browned. Place fish strips on shells or tortilla. Top with coleslaw and your favorite salsa!
