PORK CUTLETS

½ lb. pork cutlets
1 tablespoon lemon juice
1 egg
1 tablespoon water
1 tablespoon vegetable oil
½ cup fine, dry breadcrumbs
¼ cup grated Parmesan cheese
¼ cup all-purpose flour
½ tsp salt
1/8 tsp pepper
¼ cup butter or margarine
Grated Parmesan cheese

Sprinkle pork cutlets with lemon juice and set aside for 30 minutes.

Combine egg, water and oil; beat well.  Combine the breadcrumbs and ¼ cup cheese;
stirring well. 

Combine flour, salt and pepper; dredge cutlets in flour mixture.  Dip cutlets in egg mixture, dredge in breadcrumb mixture, coating well.

Saute cutlets in butter about 3 minutes on each side or until browned.  Sprinkle with additional Parmesan cheese.
