SPICY PORK KABOBS

3 mediuim onions, minced
1 clove garlic, minced
¼ cup creamy peanut butter
3 tablespoons soy sauce
1-1/2 tablespoons lemon juice
1 tablespoon brown sugar
1-1/2 tsp ground coriander
1-1/2 tsp salt
1 tsp ground cumin
½ tsp red pepper
½ tsp freshly ground pepper
2 lbs boneless pork, cut into 1-1/2 inch cubes

Combine all ingredients except pork, mix well.  Add pork and stir to coat.  Cover and refrigerate 3 to 4 hours.  Place pork on skewers.  Grill kabobs 30-35 min over med. heat, turning frequently.
