1-1/2 lbs. of fresh chicken breast tenders
4 oz of unsweetened dried coconut
5 Tbls of unsalted butter
1 Tbsp of paprika
Salt and pepper to taste (approx. 1-2 tsp. each)
Pre-heat oven to 350 degrees. Melt butter in a microwave safe bowl and place in a container large enough to dip a chicken piece into. Mix coconut with seasoning and place in a container or on a plate large enough to hold a couple of chicken pieces.
Dip chicken in butter then dredge in seasoned coconut. Lay on a baking sheet and sprinkle any remaining mixture on pieces. Bake 25-40 minutes or until done depending on size of tender pieces and your oven. Serving size is approx. 3 chicken tenders.
