HERB CRUSTED PORK TENDERLOIN

1 trimmed Pork Tenderloin
1/4 c Italian Bread Crumbs
2 TBL grated parmesan cheese
1 tsp dried sage
2 TBL low-fat mayonnaise
1 egg white
1 TBL all purpose flour
Vegetable oil cooking spray

Preheat oven to 375 degrees.

Spray cooking dish or pan with cooking spray.
Bowl #1 - mix bread crumbs, cheese and sage together.
Bowl #2 - combine mayonnaise and egg white. Beat until smooth.

Pour flour into shallow bowl and roll tenderloin into flour and coat. Dip tenderloin into mayonnaise mixture and coat completely. Roll tenderloin into bread crumb mixture.

Bake for 35 to 50 minutes or until internal temperature is 145 degrees.
