HIRSCH’s COMPOUND BUTTER

Ingredients:

4 oz Plugra Salted Butter softened
1 pinch course ground black pepper
1 pinch cayenne pepper
½ each zest and juice of a lemon
¼ cup parsley, finely chopped
1 clove garlic clove, minced

Directions:

In a medium bowl, mix all ingredients.

Spoon mixture onto a piece of cooking parchment paper or plastic wrap. Roll to create log shape. Twist ends of paper to seal.

Refrigerate log until firm, about 3 hours. Slice into “coins” to serve on grilled steaks, chicken or fish.
