4 8-oz Cod Loins
Salt and pepper to taste
2 cups olive oil
1 cup honey
¼ cup fresh lemon juice
1 tsp liquid smoke (mesquite or hickory)
Season Cod Loins with salt and pepper.
Combine the next 4 ingredients in large bowl. Stir with wire whip until well-mixed. Place fish in a shallow pan and pour marinade mixture over the top. Let stand for 2 to 3 hours in the refrigerator.
Pre-heat your grill to med-high heat. Drain Cod Loins well from the marinade (a colander works best). Grill Cod Loins 6-7 minutes on each side.
