DRY BRINED PRIME TOP SIRLOIN STEAKS
1 1-1/4 Prime Top Sirloin (approx. 1-1/2 to 2 pounds)
2 tsp sea salt (Maldon)
1 tsp dried Italian herbs or herbs de Provence
To Taste - Freshly ground black pepper
Cover each side of the steaks evenly with salt 90 minutes prior to grilling.
Let the steaks rest at room temperature for 45 minutes, then turn over and continue letting them rest.
Preheat the grill to high heat 10 minutes before grilling.
Rinse the steaks very well and pat them dry with a towel.
Season the steaks with black pepper and herbs, then place on the grill for one minute. Turn the steaks 90 degrees for another minute, then turn the steaks over and repeat.
Lower the grill temperature to medium and continue grilling for about 6-8 minutes. Flip and grill for another five minutes.
Check the internal temperature with an instant-read thermometer. Remove the steaks when they reach 135 degrees internal temperature for medium rare.
Cover with foil and rest for at least 7-8 minutes.
Slice the steak and serve with your favorite sides.
