4 each lamb shanks, rinsed and dried
2 Tbs Tim’s Texas 2 Step Top Shelf Gourmet Blend
16-20 each garlic cloves, peeled
6 oz. lemon juice, freshly squeezed
1 cup chicken broth
½ cup lemon olive oil, Etravaganzo
Preheat oven to 450 degrees.
Spread the garlic cloves on the bottom of the roasting pan to create a bed for the lamb shanks. Place the lamb shanks on top of the garlic. Drizzle lemon olive oil over them. Season Lamb shanks with Top Shelf Gourmet Blend.
Place in the pre-heated oven uncovered for 15 minutes per side until the lamb is golden brown on both sides (total 30 minutes).
Reduce the oven temperature to 350 degrees.
Remove the lamb from the oven.
Pour in lemon juice and chicken broth into pan. Cover tightly with aluminum foil and place in the oven. Roast for 2-1/2 hours or until the meat is very soft and falling off the bone.
Serve with creamy polenta or roasted root vegetables.
Drizzle pan jus over the top.
