HIRSCH’S LOBSTER TAIL THERMIDOR

Ingredients:

4 6-8 oz Lobster Tails, cooked in boiling salted water and diced
2 Tbs onions, chopped
2 Tbs butter
3 oz. diced Pancetta
2 Tbs flour
¼ tsp kosher salt
1/8 tsp black pepper
1/8 tsp paprika
½ cup heavy cream
½ cup chicken broth
½ tsp Worcestershire sauce
1 egg yolk
1 Tbs sherry wine
3 Tbs shredded Parmesan

Directions:

Heat oven to 450 degrees.

Saute onion and Pancetta in butter. Blend in flour and seasonings. Cook over low heat until bubbly.

Remove from heat and stir in cream, chicken broth and Worcestershire sauce. Bring to boil, stirring constantly.

Boil 1 minute. Add egg yolk, sherry and lobster.

Place mixture in shell of lobster or individual baking dishes and sprinkle with 3 tablespoons shredded Parmesan.

Bake 5 minutes.
