MOM’s PEPPERONI LASAGNA
This is one of my all time favorites that my Mom makes.
1-1/2 lbs. ground beef, Sirloin
2 links spicy Parmesan sausage, casing removed
1 jar Hirsch’s Roasted Garlic and Onion Pasta Sauce
12 oz cottage cheese
12 oz ricotta cheese
2 cups mozzarella cheese, shredded, divided
1 cup grated Parmesan cheese, divided
2 tsp Italian seasoning
¼ pinch salt & pepper
1 box lasagna noodles, ready to use
4 oz pepperoni slices
In a large skillet, brown ground sirloin and spicy parmesan over medium heat until meat is no longer pink, drain. Stir in Hirsch’s Roasted Garlic & Onion Pasta Sauce. Set aside until assembly.
In a medium bowl, combine the egg, cottage cheese, ricotta, half of each mozzarella and grated parmesan cheeses, Italian seasoning and salt & pepper. Spread ½ cup meat sauce into a greased 13-in x 9-in. baking dish. Layer with pasta sheets, the cheese mixture and layer pepperoni over the cheese. Add second layer of pasta and rest of meat sauce. Sprinkle with mozzarella and Parmesan cheeses.
Cover and bake for 350 degrees for 35 minutes. Uncover, bake 10 minutes longer or until heated through. Let stand for 15 minutes before cutting.
