GRANDMA’s CHICKEN AND NOODLES

My all-time favorite recipe from my Grandma.

Ingredients:

1 whole chicken 3-5 pounds
2 each carrots, diced
2 stalks celery, diced
1 medium onion, diced
2 quarts water or enough to cover
1 cup chicken stock or broth
1 Tbs salt
2 tsp black pepper
2 cans cream of chicken soup
1 pkg frozen egg noodles

Directions:

In a large stockpot, combine first 8 ingredients, trim off excess fat and skin from chicken. Bring up to a simmer. Cook chicken for 1 hour, (chicken will fall apart at the leg joints). Remove chicken from stock, place in shallow pan and let cool until it can be handled easily.

Remove all the chicken from the bones and put back into stockpot. Add cream of chicken soup, bring back to a simmer, stock will thicken slightly. 10 minutes before serving, add egg noodles. Season to taste with salt and pepper. Served over mashed potatoes.
