ORANGE CHICKEN IN SLOW COOKER
6 Chicken breasts – boneless & skinless
1 tsp ginger
1 tsp salt
1 tsp pepper
1 lb. frozen concentrate orange juice
1 cup shredded coconut
2 cups orange segments or canned mandarin oranges
2 each green onions, chopped
¼ cup chopped cilantro
2 cups Jasmine Rice
Put chicken, ginger, salt, pepper and frozen orange juice in crock pot and cook on low for 6 hours.
Serve chicken on hot cooked rice on platter.
Top with coconut, orange segments and green onions.
Serve chicken liquid in gravy boat, if desired.
Serve over Jasmine Rice.
