¼ cup red wine vinegar
1 garlic clove, minced
1-1/2 tsp fresh chopped basil (or 1 tsp dried)
1 tsp fresh chopped oregano (or ½ tsp dried)
1-1/2 Tbs lemon juice (about ½ lemon)
½ cup olive oil
To Taste Salt and freshly ground black pepper
1 medium red onion, thinly sliced
3 each Roma tomatoes, halved and thinly sliced
1 lb. Hirsch’s Sliced Gyro meat
1 tub Tzatziki sauce
1 pkg feta cheese, crumbled
1 pkg pita bread flats, lightly toasted or grilled
Combine first 6 ingredients in a medium bowl. Slowly whisk in oil until blended. Season with salt and pepper. Add slice tomatoes and red onions, gently toss in vinaigrette and let marinate for at least 1 hour.
Cook the Gyro meat either in a skillet and brown like bacon, or can cook in the oven at 350 degrees F on a rimmed cookie sheet pan lined with foil or parchment paper until browned on both sides.
To assemble: Place grilled pita on a plate, smear some tzatziki sauce on pita, lay down 3 slices of gyro meat, to with marinated onions and tomatoes a little drizzle of the vinaigrette and finally some crumbles of Feta.
