CIDER BRINED IOWA CHOPS
4 cups apple cider
½ cup cider vinegar
1/3 cup kosher salt
1/3 cup brown sugar
2 cups beer
4 counter cut Iowa Chops
To Taste favorite steak rub or fresh ground black pepper
In a bowl, combine the apple cider, vinegar, salt and sugar. Whisk until sugar and salt dissolve. Add the beer and gently stir to combine. Place the pork chops in to a gallon zip lock bag, then pour the brine mixture over the top. Carefully close the plastic bag, getting out as much of the air as possible. Place in a clean bowl or pan and let chops brine for 8 hours or overnight.
Drain pork from the brine and pat dry before grilling. Lightly season with favorite rub.
Place pork on a medium high heat grill, cook 5-7 minutes per side until pork chops are at 145 degrees F internal temperature.
Let meat rest at least 7 minutes before cutting into the meat.
