1 tablespoon fresh thyme, chopped finely
1 tablespoon fresh parsley, chopped finely
1 tablespoon fresh rosemary, chopped finely
800g to 1kg wagyu steak
Salt and pepper
Extra virgin olive oil
Mix the herbs, salt and pepper. Rub the mixture evenly on both sides of the steak. Place the steak on a plate, cover it with plastic wrap and refrigerate for at least 2 hours or up to 6 hours.
Before grilling, let the steak stand at room temperature for at least an hour.
Heat the grill pan in medium heat. Drizzle both sides of the steak with olive oil. Grill the steak to the desired doneness, about 15 minutes each side for medium-rare, or 17 minutes each side for medium.
Transfer the steak to a cutting board. Let it rest for 5 minutes.
